Molise white truffle
Molise white truffle: Tuber magnatum from the autumn woods
This is Tuber magnatum Pico, listed among Molise's traditional agri-food products (PAT) and governed by a regional law on foraging. It is hunted with a dog and a small spade, only by holders of a permit earned through an exam, from 15 October to the end of the year. Free foragers may take no more than half a kilo a day.
- A smooth, wart-free skin, pale yellow or greenish
- Flesh from brown to hazel, sometimes flushed with red and laced with fine pale veins
- An intense, pleasant aroma; the fine veining fades once it is cooked
How to enjoy it. Fresh truffle belongs to late autumn: by law it may only be sold during the foraging season, from mid-October to the end of December.
