Pomodoro San Marzano dell'Agro Sarnese-Nocerino (San Marzano tomato)
Pomodoro San Marzano dell'Agro Sarnese-Nocerino PDO, a peeled tomato made for sauce
Long, firm and almost seedless, the San Marzano is trained upright on stakes across the volcanic Sarno plain and picked by hand in several passes from late July to late September. The PDO, granted in 1996, protects only the peeled product, whole or as fillets, made from two ecotypes: San Marzano 2 and Kiros.
- Long fruit marked by parallel grooves, a little dimple at its end, coloured a vivid, deep red
- Firm flesh almost free of seeds and fibre under a thin skin, so it stays whole in the jar
- Sweet-sour flavour; every jar carries a label numbered by the protection consortium
How to enjoy it. The tomato of the Neapolitan Sunday sauce, it also suits meat and fish main courses. Once opened, move it with its liquid into a closed glass jar and keep it in the fridge.
