Regina tomato of Torre Canne
Regina tomato of Torre Canne: hung on the string, kept until April
Grown on the light coastal soils between Fasano and Ostuni, inside the Parco delle Dune Costiere, the regina is named after its little crown-shaped stalk. Watering with brackish water gives it a thick skin and a saltier fruit that keeps for a long time. It is a traditional agri-food product (PAT) and a Slow Food Presidium.
- Small round fruits in clusters that ripen to a deep red
- Each tomato knotted on cotton thread into a ramasola, not tied as a bunch
- Hung somewhere cool, it holds its qualities for nine or ten months
How to enjoy it. In winter, pull a tomato from the ramasola, squeeze it over bread or a frisella and season with oil, garlic and salt. It also makes an easy starter with cured meats and cheese.
