Fiaschetto tomato of Torre Guaceto
Fiaschetto tomato of Torre Guaceto: a sauce tomato from a nature reserve
A sweet, juicy local type revived in the vegetable plots of the Torre Guaceto nature reserve at Carovigno, on the Brindisi coast. It is grown organically, with no synthetic chemicals and very little water, and brackish water at that. Brindisi families once relied on it for the passata that saw them through winter.
- Sweet, juice-filled flesh, made for preserving
- Shape and colour vary slightly from grower to grower, a sign of living diversity
- A Slow Food Presidium since 2008, kept alive by a few determined growers
How to enjoy it. This is a tomato for summer passata to be opened in the cold months. Fresh fruit is picked from mid-June right through the summer.
