Galatina new potato
Galatina new potato PDO: an early crop from Salento's red earth
An early Sieglinde potato from the sandy red soils around Galatina, in Salento, which warm up fast as spring arrives. Harvest runs from March to 30 June, and the tubers are never washed, so they come with a dusting of their own soil. The flesh is firm, pale yellow and low in starch.
- Bright yellow skin, often stained rust-coloured by the iron-rich soil
- A skin so thin it flakes, yet free of cracks
- Always whole and unsprouted, graded into two regular sizes
How to enjoy it. Slice it into salads or serve it boiled, fried or roasted; in Salento it is the potato for pasta with potatoes and mussels. Keep it cool, dry and dark, and enjoy it while in season.
