Fucino potato

PGI

Fucino potato PGI, grown on the bed of a drained lake in the Abruzzo uplands

Lake Fucino was drained in 1875, and its bed is now a farmed plain at around 700 metres shared by nine L'Aquila municipalities. That is where this firm-fleshed potato grows, round to oval, its skin clinging tight and its flesh white to yellow. Harvested from 20 July to 15 November, it carries the PGI.

  • Firm flesh that does not yield when you press it
  • Skin that clings to the flesh, tubers sized between 35 and 80 millimetres
  • In tasting trials, steamed or fried, it stood out for its characteristic taste

How to enjoy it. Its firm texture holds up in gnocchi, in the oven and in the frying pan; for the local classic, simmer it into a soup with pumpkin.
