Terre Tarentine extra virgin olive oil
Terre Tarentine PDO: a gently fruity oil from Taranto's western reaches
On the western side of Taranto province, where Messapian amphorae and coins already bore the olive tree, at least 80% of this oil comes from Frantoio, Coratina, Leccino and Ogliarola. Picked between October and January, the olives reach the mill the same day and are processed only mechanically, with water no warmer than 30 degrees.
- Yellow-green and of medium flow, gently fruity with a light to medium peppery note
- Olives held in rigid, airy crates and milled within 72 hours of picking
- Vintage always on the label, and a unique alphanumeric code on every container
How to enjoy it. It shines on vegetable-based first courses, orecchiette with turnip tops above all, and suits meat and fish too. Store it in the dark at 14-18 °C and use it within four to six months of pressing.
