Terra di Bari extra virgin olive oil
Terra di Bari PDO: three sub-zones built around Coratina
Made around Bari and in the province of Barletta-Andria-Trani, this extra virgin oil always names one of three sub-zones: Castel del Monte, Bitonto, Murgia dei Trulli e delle Grotte. Coratina, the cluster-bearing olive named after the town of Corato, sits at its heart alongside Cima di Bitonto and Cima di Mola. Harvested by 30 January, the olives are milled within two days.
- Castel del Monte: at least 80% Coratina, intensely fruity, with fresh grass, artichoke and almond
- Bitonto is lighter on the palate; the Murgia dei Trulli e delle Grotte oil is golden and gentle
- A panel score of at least 7, and the sub-zone always stated on the label
How to enjoy it. Pour it raw over vegetables, bruschetta and pinzimonio, cook with it to deepen a dish, and set it beside Puglia's fish dishes. Keep it at 14-18 °C away from light and odours, and use it within four to six months of pressing.
