Violetta di Ostuni aubergine
Violetta di Ostuni aubergine: pale violet, sweet and never bitter
An heirloom from the market gardens of Ostuni, brought back from the brink thanks to seeds saved by one elderly grower. Pear-shaped and elongated, it has a thin skin of soft violet. Picking is done by hand, a few fruits at a time, from mid-May to October.
- Firm flesh with very few seeds
- Sweet-tasting, without the bitterness many aubergines carry
- A thin, pale violet skin that gives the variety its name
How to enjoy it. Fry it, bake it or put it on the grill; Ostuni layers it into Sant'Oronzo's melanzanata, the bake for the 26 August feast. Grilled slices take garlic, herbs, olive oil and a few drops of vinegar.
