Fico Bianco del Cilento (dried white fig)
Fico Bianco del Cilento PDO: pale-skinned dried figs with dense, sweet flesh
Brought by Greek settlers, the fig has stood beside the olive tree in Cilento's countryside for millennia, rising from poor man's bread to a festive treat. These are Dottato figs dried in the sun across 68 municipalities around Salerno, nearly all inside the national park. PDO since 2006.
- Even, pale yellow skin; amber to brown when oven-baked, almost white when peeled
- An elongated pear shape with dense, very sweet, amber flesh
- Nearly solid inside, the seeds largely hollow: a mark of quality in a dried fig
How to enjoy it. Enjoy them plain, split and stuffed with almonds, walnuts or wild fennel seed, or dipped in chocolate at Christmas. Stored somewhere cool and dry, they keep for a long time.
