Tavo round bean
Tavo round bean, a pearl-white, pea-sized heirloom from the Pescara hills
Planted in mid-June and gathered by hand from late October, this small bean grows on the sandy, pebbly soils of the Tavo valley around Penne and Loreto Aprutino. Faster-growing borlotti nearly pushed it out until a restaurateur tracked the seed down among a handful of valley families. It is now a Slow Food Presidium and a traditional agri-food product (PAT) of Abruzzo.
- A very thin skin, so after an overnight soak it cooks fast and sits lightly
- Pearly white, from milk to ivory, each bean tiny and round as a pea
- Grown without chemical weedkillers on rotated fields fed with mature manure, and hand-picked
How to enjoy it. Soak it overnight, then boil it for salads and soups, cook it with autumn pumpkin or turn it into a sauce for handmade sagne and tacconelle.
