Sarconi bean
Sarconi bean PGI: a whole family of landraces from the upper Agri valley
One name gathers Cannellino, Borlotto and some twenty local landraces such as Tabacchino or San Michele rosso, grown above 600 metres in the province of Potenza. Sandy, lime-free alluvial soils, soft irrigation water and summer hand-picking give a bean with tender flesh.
- Each type has its own colour, from white Cannellino to ruby-red San Michele
- Soft inside and gentle in flavour; it cooks fast and sits lightly on the stomach
- Every pack is labelled with the PGI name and the specific landrace
How to enjoy it. Quick to cook, it suits pasta e fagioli, soups, risotto or a simple side dish. Fresh pods keep four or five days in the fridge.
