Controne bean
Controne bean: a small Alburni white that cooks in no time
Controne, a village of olive groves and bean fields below the Alburni massif, lends its name to this bean. The seed is small and brilliantly white with no dark eye, a late variety that ripens in autumn. It is a Slow Food Presidium and on Campania's list of traditional products.
- Pure, unblemished white with no eye, from a pale, creamy pod
- A very thin skin, so the beans stay whole in the pot instead of bursting
- Ready in a fraction of the usual cooking time, and the Campania region praises its digestibility
How to enjoy it. Locals eat it "al tozzetto": boiled and spooned over a fresella with extra virgin olive oil, or with escarole, or with home-made làgane pasta. Dried, it keeps all year round.
