Rotonda white beans
Rotonda white beans PDO: thin-skinned, quick-cooking beans from the Pollino
Two local types, Fagiolo Bianco and Tondino, also called Poverello Bianco, grown in Rotonda and three neighbouring villages inside the Pollino park. The plants climb hand-built chestnut supports and are picked only by hand, fresh in the pod from August and dried from mid-September.
- Round or oval seeds, pure white with no flecks, under a very thin skin
- That thin skin means shorter cooking times and a gentle, delicate texture
- Dried, they are rich in protein, with content reaching up to 27%
How to enjoy it. They anchor Pollino home cooking, from escarole with beans to a thick potato and bean soup. Keep fresh pods in the fridge for a few days; store dried beans in a sealed jar somewhere cool and dry.
