Cavolfiore della Piana del Sele (cauliflower)
Cavolfiore della Piana del Sele PGI: firm, sweet curds the whole year round
Ten towns in the province of Salerno, on the plain between the Amalfi Coast and the Cilento, grow this cauliflower in deep volcanic and alluvial soils, as records show since the sixteenth century. The hills crop in summer and the plain from October to April, so the harvest never stops. It became a PGI in 2024.
- A rounded curd, whole and unblemished, at least 13 cm across
- Firm, crisp texture and a sweet, delicate taste, with at least 8.7 degrees Brix
- It holds its crunch through cooking, a quality the PGI specification singles out
How to enjoy it. Boil it or add it to soups the traditional way, or use it to fill ravioli, flans and velvety soups. Keep it in the fridge and let it lose the chill shortly before cooking.
