Fucino plateau carrot
Carota dell'Altopiano del Fucino PGI, sweet and crisp from an old lakebed
Until 1870 the Fucino basin was a lake; today its floor is fertile farmland at about 700 metres, ringed by the mountains of the L'Aquila Apennines. This is where a cylindrical carrot, orange right up to the shoulder, is pulled in the early morning sun and reaches the washing centre within four hours.
- Deep, even orange up to the shoulder, a rounded tip and no root hairs
- It snaps clean, with almost glassy flesh and a sweet taste
- Quality peaks from June to October, though it is harvested all year
How to enjoy it. Grate it raw or cut it into matchsticks with apples, oranges and radicchio, or cook it into soups, bakes and roasts. Kept somewhere cool, it lasts a good while.
