Nicastro pink garlic
Slow Food Presidium
Nicastro pink garlic: a bold scent with a gentle bite
Grown around Lamezia Terme, this garlic has round white cloves streaked with pink. It is pulled in June, plaited and left to dry, and a handful of growers keep it alive by replanting their best cloves each year; it is now a Slow Food Presidium.
- Medium, rounded cloves, white with pink streaks, sold in plaits
- A strong aroma that stays with the bulbs for up to a year after harvest
- Mild on the palate, so it seasons a dish rather than taking it over
How to enjoy it. Reach for it to lift the flavour of a dish without harshness; local makers also add a little to cured meats. Hang the plait somewhere dry.
