Strazzata of Avigliano
Strazzata of Avigliano: the peppery ring bread of Lucanian country weddings
Baked in Avigliano, in the province of Potenza, this straw-yellow ring is made from durum and soft wheat flour, sourdough, warm water and a generous hit of coarsely ground pepper. Once made only for weddings, it is now a traditional agri-food product (PAT) and a Slow Food Presidium.
- Its ring shape and straw-yellow colour make it easy to spot at a glance
- Plenty of coarse pepper gives it a decided kick: the trait that defines it
- Some bakers have gone back to old grains such as Senatore Cappelli, carosella and risciola
How to enjoy it. Split it and fill it the traditional way, with ham, podolico provolone or pecorino. Against the pepper, Avigliano poured sweet local wine from Acerenza or Maschito.
