Sospiro di Bisceglie
Sospiro di Bisceglie: a little sponge dome with vanilla cream and a sugar glaze
A feather-light sponge scented with lemon zest, piped into a small pointed dome, filled with vanilla pastry cream and wrapped in giulebbe, a fine sugar glaze. The bakers of the Slow Food Presidium share a protocol that favours free-range eggs, Puglia flours and lemons from around Bisceglie. Since 2014 it has also been a traditional agri-food product (PAT).
- A small pointed dome, shaped with a piping bag
- Soft, lemon-scented sponge around a heart of vanilla cream
- Fully cloaked in a thin giulebbe glaze; the nuns' original version was pink
How to enjoy it. Made all year round, it is a wedding sweet, at least in legend: guests kept waiting at Lucrezia Borgia's marriage are said to have been consoled with these very cakes.
