Sise delle monache (Guardiagrele cream cakes)
Sise delle monache, three peaks of sponge and custard from Guardiagrele
Tradition credits them to the Poor Clare nuns of Guardiagrele, on the slopes of the Majella, who, as the story goes, entrusted their recipe to a family of village pastry cooks; in the village they are still made by hand. Three soft mounds of sponge cake filled with custard and dusted with icing sugar echo the three summits of the massif.
- Few ingredients: flour, sugar, fresh eggs and milk, a little lemon zest
- The proportions are a family secret kept by the village pastry shops
- A traditional Abruzzo product (PAT), also listed under the name tre monti
How to enjoy it. Made with fresh milk and eggs, these are fresh pastries to eat as soon as they are ready, which is why Guardiagrele itself remains the place to taste them.
