Salice Salentino DOC: Negroamaro from the red earth between Lecce and Brindisi
Seven towns straddle the Lecce and Brindisi provinces here, their vines rooted in red soil and cooled by sea winds. Red and rosé are at least 75% Negroamaro, while white and sparkling rely on Chardonnay; the appellation dates from 1976.
- Deep ruby with violet glints; red fruit, plum, leather and liquorice, with a faintly bitter close
- A Riserva spends two years or more maturing, with at least six months in wooden casks
- The coral-pink rosé smells of rose and blood orange; some growers still make it the old 'a lacrima' way
How to enjoy it. Match the red with meat and aged cheeses, the rosé with starters, pasta and vegetables, and the white with fish, raw included. Let the dish decide which style to open.
