Rustico leccese (Lecce puff pastry)
Rustico leccese: golden puff pastry from the noble kitchens of 18th-century Lecce
Two puff-pastry rounds, sealed at the edge, enclose béchamel, tomato passata and mozzarella and bake to a deep golden colour. Unlike many Salento specialities it did not come from farmhouse cooking: the recipe is traced to aristocratic homes in late-18th-century Lecce. It has been a traditional agri-food product (PAT) since 2004.
- A puff-pastry round about ten centimetres across, egg-glazed and richly golden
- A soft, creamy béchamel filling with tomato and mozzarella
- Puff pastry and béchamel, refined ingredients, set it apart from Salento's peasant bakes
How to enjoy it. Made all year round in bakeries across the province of Lecce, it is a savoury bite best discovered at home, between the baroque heart of the city and the villages of the Salento.
