Primitivo di Manduria
Primitivo di Manduria: an Ionian DOC red and a DOCG Dolce Naturale
Eighteen towns between Taranto and the Brindisi countryside, facing the Ionian Sea, make a red that is at least 85% Primitivo and released only after 31 March following the harvest. Alongside the DOC sits the DOCG Dolce Naturale, pure Primitivo from grapes left to dry.
- Deep ruby moving towards garnet with age; plum, cherry jam, tobacco and a touch of spice
- The Riserva matures for 24 months, nine or more of them in wood, and gains softness
- The Dolce Naturale smells of morello cherry and dried fruit, ends on cocoa, and waits until June
How to enjoy it. Pour the red with orecchiette in tomato sauce and cacioricotta or with meat ragù, and the Riserva with roasts and game. Save the Dolce Naturale for dry pastries, dark chocolate or blue cheese.
