Villa San Giovanni piparelle biscuits
Villa San Giovanni piparelle: almond slices cut by hand on the Strait
Bakers in this town facing Sicily have made these dry biscuits for more than a hundred years. Almonds, honey, cinnamon, cloves and a hint of orange essential oil go into a log that is sliced by knife and dried in the oven for hours. They are a Slow Food Presidium and a recognised traditional product of Calabria.
- Roughly four millimetres thick, every slice showing a mosaic of almond cross-sections
- Scented with honey, spice and orange, yet restrained: no pepper and a light hand with the rest
- A long, low second bake leaves them crisp and thoroughly dry
How to enjoy it. A dry biscuit made all year round, easy to keep in the cupboard: break one at the end of a meal or with a mid-afternoon pause.
