Gentile di Puglia sheep
Gentile di Puglia sheep: fine wool, delicate lamb and milk for Canestrato
For centuries the Gentile wintered on the Tavoliere around Foggia and summered in the Molise and Abruzzo mountains, walking the transhumance tracks. Once famed for a wool that Pliny and Columella admired, it now grazes mostly semi-free-range, giving little milk of high quality and lamb with a very delicate flavour.
- Lambs raised on their mothers' milk and on pasture, for meat of gentle flavour
- Scarce, prized milk, just right for making Canestrato Pugliese
- A disease-resistant breed at home in Puglia's climate, a living piece of local biodiversity
How to enjoy it. Meet it at the table through its lamb and through Canestrato Pugliese: young beside raw vegetables, pears or broad beans, aged and grated over orecchiette with meat ragù.
