Panzerotto
Panzerotto: Puglia's half-moon street food that puffs up as it cooks
Pizza dough rolled into a disc, filled with mozzarella, tomato and oregano and folded into a half-moon: the panzerotto is Puglia's year-round street food, fried or baked. Its name comes from 'panza', the belly that swells as it cooks. It has been a traditional agri-food product (PAT) of the region since 2012.
- A well-sealed edge and, when fried, a golden surface; usually 10-15 cm across
- Mozzarella drained with care, so the filling stays soft without soaking the dough
- Beyond the classic: turnip tops, ricotta, minced meat, provolone and mortadella, or sponzali
How to enjoy it. Eat it hot but not scalding, held in your hand and ideally on the move, as tradition has it, and mind the filling, which holds the heat.
