Ostie ripiene (filled wafers of Monte Sant'Angelo)
Monte Sant'Angelo's ostie ripiene: honeyed almonds between two thin wafers
Two thin wafers, made like communion hosts, close around almonds toasted and caramelised in honey and sugar, finished with a breath of cinnamon. Legend traces them to around 1600 and the Poor Clare nuns of the Holy Trinity convent in Monte Sant'Angelo. They have been a traditional agri-food product (PAT) of Puglia since 2001.
- Cream-white wafers that shatter at the first bite, often stamped with a sacred image
- Inside, dark-brown caramelised almonds, crunchy and bound together by honey
- Honey and cinnamon on the nose, with a faint bitter edge from the spice to balance the sweetness
How to enjoy it. Dry wafers and a honey-set filling make them a sweet that travels well: carry them along the Gargano and break them by hand to enjoy the crisp shell against the crunchy almonds.
