Saracena Moscato al governo: amber sweet wine from the Pollino slopes

In Saracena, on the Calabrian side of the Pollino, must from guarnaccia and malvasia is boiled down by about a third, then 'governed' with moscatello and duraca grapes that have shrivelled in the shade and been pressed by hand. Wild fermentation and roughly six months of maceration give a sweet wine that was already travelling to the papal court in the 1500s and is now a Slow Food Presidium.

  • Bright amber, with a rich nose of dried fig, date, almond, honey and exotic fruit
  • Sweet without cloying: acidity keeps it lively and the finish turns gently bitter
  • Made by the village's small producers, who stay loyal to boiling the must

How to enjoy it. Pour it into small glasses after dinner or for slow sipping, lightly chilled in the warm months and unchilled in winter so the aromas open. Try it with Pollino biscuits and taralli, or with cheeses that are not blue-veined.
