Grano dei morti (All Souls' wheat)
Grano dei morti: Foggia's spoon sweet for All Souls' Day
Wheat berries soaked for days and boiled until they burst, then dressed with fig syrup, almonds, walnuts, candied fruit, chocolate, cinnamon, cloves and pomegranate seeds. It is how the province of Foggia remembers its dead, descended from the blessed wheat eaten by Greek-rite Christians. It is made at home, for the family, and is not sold.
- Bright pomegranate red, a symbol of rebirth, against dark fig syrup and chocolate
- Dense sweetness, crunchy nuts and the warmth of cinnamon and cloves
- Its name goes back to the Byzantine kolba, cooked wheat
How to enjoy it. It is dressed an hour before serving and brought to the table freshly mixed, in the days around 2 November.
