Colombino di Manduria
Colombino di Manduria: puff pastry, orange almond paste, an apricot dove
Manduria's small pastry is shaped like a truncated cone: two layers of flaky puff pastry close around orange-scented almond paste and custard, beneath a soft white meringue. On top, a little dove drawn in apricot jam gives it its name. Born in the 1950s, it is now a Slow Food Presidium.
- Almonds, oranges, butter, eggs and apricots come from local growers and producers
- Cut it open to see pastry, almond paste and custard in distinct layers
- Light, soft and flaky at once, with orange running through the almond
How to enjoy it. Its classic partner is Primitivo di Manduria Dolce Naturale, a wine from the same land. It is the pastry of the feast of San Gregorio Magno on 3 September, and now of Sundays in Manduria too.
