Cartellate
Cartellate: fried pastry spirals that hold vincotto and honey
Puglia's Christmas sweet starts as a dough of flour, extra virgin olive oil and white wine, rolled paper-thin, cut into strips, pinched and coiled into little baskets. Once fried, every hollow fills with vincotto, fig syrup or honey, or the spirals are simply dusted with icing sugar and cinnamon. Tradition sees in them the swaddling bands of the infant Jesus.
- Crumbly and crisp, with frying bubbles on the surface and a hint of white wine
- Glossy and dark with vincotto, amber with honey, pale when only dusted with sugar
- A traditional agri-food product (PAT), with all of Puglia as its area of origin
How to enjoy it. They belong to December: bring them out over the holidays, with vincotto for the most traditional finish or cotto di fichi as the alternative.
