Burrata di Andria PGI: stretched curd outside, cream-soaked shreds within
Born on the farms around Andria, burrata is a glossy pouch of stretched curd holding a soft heart of stracciatella and cream. Cow's milk only, curd torn by hand, a knot closing the top: a Puglia dairy craft protected as a PGI since 2016.
- A white, glossy skin at least two millimetres thick, gathered into a closure at the top
- Cut it and you find irregular hand-torn shreds in cream, never a uniform mince
- Delicate aromas of milk and cream: a cheese for the days right after it is made
How to enjoy it. Keep it chilled at 4-6 °C and bring it to the table whole, cutting it open there so the cream spreads across the plate. Serve it alongside other traditional Puglia food.
