Latronico figure-of-eight biscuit

Traditional (PAT)

Latronico figure-of-eight biscuit: three ingredients, cooked twice

Soft wheat flour grown in and around Latronico, water and salt, with no fat at all: that is the whole of this savoury tarallo, boiled first and then baked. The town links its character to carosella, an old soft-wheat variety. It is listed as a traditional agri-food product (PAT) of Basilicata.

  • Its figure-of-eight loop makes it easy to spot at a glance
  • Boiled in water, then baked, following the custom of this mountain town
  • Once made only at home, it has been produced commercially since the late 1970s

How to enjoy it. Think of it as a companion at the table rather than a sweet. In Latronico it goes with cheese and cured meats, with honey, or beside a glass of red wine.
